Aceti Caselli - TRADITIONAL GRAPE MUST FROM MODENA

ACETO BALSAMICO TRADIZIONALE DI MODENA

Aceto Balsamico Tradizionale di Modena (Traditional Balsamic Vinegar of Modena) is obtained from cooked grape must (which matures through slow acetification), derived from natural fermentation and progressive concentration processes through slow aging in various sizes of different types of wooden barrels, without any addition of aromatic substances. The grape must used comes from Lambrusco, Trebbiano or Sauvignon grape vines cultivated in the province of Modena, in the area between the valley of river Secchia to the left bank of river Reno. Full and bright dark brown in colour, it reveals its density in a correct and smooth running syrup. Of inimitable well-balanced sweet and sour TASTE, it has a complex, penetrating and smoothly acid scent.
Balsamic vinegar is generally used for dressing vegetables. It is also very popular for preparing risottos, grilled meat, Carpaccio and fillet steak, as an appetizer on chunks of Grana cheese or even as a dessert over strawberries.
The Certification Body and the Committee of Expert Tasters certify the two levels of quality available:
AFFINATO - aging of at least 12 years
EXTRA VECCHIO - minimum aging of 25 years (gold cap)
