PGI Balsamic Vinegar of Modena presents a high and varied quality of vinegars. The must used to create our Balsamic Vinegars of Modena are obtained exclusively from Lambrusco and Trebbiano grapes of the Modena area. The must and vinegars used to trigger the acetification process are left to mature and age in barrels made of different types of wood. Throughout this period, the vinegar absorbs the characteristic bouquet from the wood, which is indeed what distinguishes Aceto Balsamico di Modena.
